Avocado Cake

2 2/3 cup sugar
1 cup margarine
4 eggs
2 cups mashed avocados
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
1 tsp salt
2 rounded tsp baking soda
2/3 cup buttermilk
1 cup chopped walnuts
1 cup chopped dates
1/2 cup raisins
3 cups flour

Mix sugar, margarine, eggs, and avocados. Add cinnamon, allspice, nutmeg, salt, and baking soda. Mix well, then add buttermilk, walnuts, dates, raisins, and flour. Pour into very well greased 9x13 pan and bake at 300 for 1 hour. Let cool on rack.

Frosting:
8oz cream cheese
1 pound powdered sugar (3 1/2 cups)
1 cube margarine
1 tsp vanilla
Mix together with hand mixture until smooth.

Option 1: Mix frosting and place cake in a slightly larger rectangle pan. Frost top and sides with frosting and refrigerate.
Option 2: When cool, cut cake into 4 loaves, wrap in foil and freeze. When ready to serve thaw 2 loaves and prepare 1/2 the frosting recipe. Frost all sides of cake before serving.
