Italian Style Burgers

1/4 cup fine dry bread crumbs
3 TBS milk
1/4 cup finely chopped onion
2 TBS fresh parsley
1 TBS Parmesan cheese
1/8 tsp garlic powder
dash of pepper
1 pound ground beef
1 large tomato, sliced
4 slices mozzarella cheese

Mix together in a bowl by hand; bread crumbs, milk, onion, parsley, Parmesan cheese, garlic and pepper, and ground beef. Divide into fourths and make four hamburger style patties. Broil for 5-6 minutes each side until cooked through. Add one tomato slice then one mozzarella cheese slice on each patty. Broil until cheese melts.

Tuna Cakes

2 cans (6oz) light tuna in water, drained, flaked
1 package chicken flavored stuffing mix
1 cup shredded carrots
1/2 cup shredded cheddar cheese
2 TBS pickle relish
1/3 cup Mayonnaise
3/4 cup water
Lemon wedges

Mix all ingredients in a bowl and mix well until moist and blended. Cover and refrigerate for at least 15 minutes. Heat a nonstick skillet on medium heat and coat with cooking spray. Scoop tuna mix with a 1/3 measuring cup, packed. Place in skillet and flatten out into a cake. They will be crumbly, so try packing them tightly before flattening. Cook on one side for 6-7 minutes or until brown. Flip and brown the other side. Place on plate and add a squeeze of lemon juice just before serving.
