Chunky Chicken Chowder

3-4 Medium potatoes 1 onion, diced 3-4 stalks celery, diced 4 small carrots, grated
Simmer above vegetables in water until tender. While cooking vegetables, cook 3-4 boneless, skinless chicken breasts and cut into small pieces.
Sauce:
3/4 cup butter 1/2 cup flour 4 cups milk
Melt butter, stir in flour, when bubbly add the milk. Stir until thickened. Add vegetables and chicken to sauce. Season with chicken bouillon granules, salt and pepper to taste.
NOTE: For lower calorie soup substitute 1/2 the milk with chicken broth.
