Asian Chicken Noodles

1/2 lb. chicken, cut into 1/4 inch strips 2 garlic cloves, minced 1 tsp ginger root, grated 1 TBS oil 1/2 cup onion, sliced 2 cups broccoli flowerettes 2 carrots, sliced 2 cups water 2 pkg beef flavor ramen noodles, broken
In a large skillet saute chicken, garlic and ginger root in oil until chicken is lightly browned. Add onion, broccoli, and carrots. Stir fry until vegetable are tender. Add water, noodles and seasoning packets. Simmer for 3-5 minutes until noodles are tender and most of the liquid has been absorbed; stir occasionally. * Beef of Pork can be used instead of Chicken*
