Tomato and Spinach Pasta Toss

2 cups rotini pasta, uncooked
1/2 lb. Italian sausage
1 pkg.(6 oz.) baby spinach leaves
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1 cup Shredded Mozzarella Cheese
2 Tbsp. Grated Parmesan Cheese

Cook pasta in large saucepan as directed on package, omitting salt.

Meanwhile, cook sausage in deep large skillet on medium-high heat 10 to 12 min. or until done, stirring occasionally. Drain; return sausage to skillet. Add spinach and tomatoes; cook 2 min. or until spinach is wilted, stirring occasionally.

Drain pasta; return to pan. Add sausage mixture and cheeses; mix lightly.

Turkey Salami Wraps

Here are the basic ingredients, although you can change them up however you want:

1 lb. deli turkey, thinly sliced
1/2 lb. hard salami, sliced
2 packages powdered ranch dressing
1 small jar roasted red peppers, drained
10flour tortillas
1 lb. cream cheese
1 head leafy green lettuce, ribs removed

Combine cream cheese and ranch dressing mix. Spread a thin layer on each tortilla. Add a thin layer of turkey and salami, then a row or two of the red peppers, then the lettuce. Carefully roll up the tortillas and wrap in plastic wrap.

Refrigerate overnight ( or at least 3 hours). Unwrap and cut into 1 inch slices and serve as appetizers. Or leave whole and eat as a lunch or snack.
