Ham and Broccoli-Cheese Pot Pie

This is just one of the recipes from the back of the Bisquick box that actually worked and tasted great. Very simple, healthy-ish, and cheap to make.

2 cups cut up fully cooked ham
*1 bag (16oz) frozen broccoli cuts, thawed and drained
2 cans condensed Cheddar cheese soup
1/4 cup milk
2 cups Bisquick mix
1 cup milk
2 TBS yellow mustard
2 eggs

Preheat oven to 400. Stir together ham, broccoli, soup and 1/4 milk in a bowl them pour into a 9x13 baking dish.

Stir together remaining ingredients until blended well. Pour over ham mixture. Bake uncovered for 30-35 minutes or until crust is golden brown.

*You can use fresh broccoli too. I just measure out about 2-3 cups and give it a quick steam.

Mom's Vanilla Ice Cream

4 eggs
2 1/2 cup sugar
1/4 tsp salt
3 TBSP vanilla
1 pt whipping cream
1 quart half and half
milk to fill

Beat the eggs until frothy. Add sugar and beat 5 minutes. Add salt, vanilla, whipping cream, and half and half. Pour into ice cream maker and add milk if needed to fill to fill line.

Zucchini, Black Bean and Rice Skillet

This one was a find! I found it on Pintrest and there are so many things I like about it. First it qualifies as hitting all three of my favorite qualifications for a recipe; healthy, cheap, and easy. Second, it's meatless. Third, it uses zucchini and bell peppers from my garden and my canned tomatoes from last years garden. Plus, it's cooked all in one pot!

1 tablespoon oil
1-1/2 cups quartered lengthwise, sliced zucchini
1/2 cup diced green bell pepper
1 can black beans, drained, rinsed
1 can diced tomatoes with garlic, undrained
3/4 cup water
1 cup instant white rice
1/2 cup shredded Cheddar and Monterey Jack cheese blend
salt and pepper to taste

Heat oil in large skillet over medium heat. Add zucchini and bell pepper; cook 5 minutes, stirring occasionally. Add beans, undrained tomatoes and water.

Increase heat and bring to a boil. Add rice; stir well. Cover; remove from heat and let stand 7 minutes or until liquid is absorbed. Sprinkle with cheese.
